Few dishes represent Sri Lankan home cooking quite like Polos Curry.

Polos is young or tender jackfruit, harvested before the fruit becomes sweet and ripe. When slowly cooked with Sri Lankan spices, curry leaves, coconut and other traditional ingredients, the firm young fruit absorbs the curry beautifully and develops the rich, deeply seasoned character Sri Lankans know so well.

For many Sri Lankans living abroad, Polos is more than simply another vegetable curry. It can bring back memories of family meals, village kitchens and clay pots simmering gently over the fire.
